Overview of the 10 course lessons:
In lesson 1 you will start with an introduction to food safety by learning what food safety is, the food manager's role in food safety, about HACCP, and then about regulations, permits & inspections.
Lesson 2 covers what biohazards are and an indepth discussion of viruses, parasites and bacteria. Then the course moves to food spoilage and foodborne disease plus common foodborne illnesses.
Lesson 3 covers 3 types of contaminants - Biological, physical and chemical.
In Lesson 4 you will learn about foods and temperature control. This includes potentially hazardous foods, food allergens, preservatives, temperature control and thermometers.
Lesson 5 and 7 cover employee health, hygiene, clothing, perfume, jewelry, etc and then cleaning and sanitation (which include detergents and trash disposal.
Lesson 6 covers purchasing, receiving and storing food while lesson 8 and 9 discuss pest control and facility design.
Finally, lesson 10 covers the HACCP system.

The Food Manager Certification is recognition that the person has received certification in the safe preparation/storage of food in order to prevent food-borne illnesses. Certification may be obtained by passing a Department of State Health Services approved Texas certified food manager exam.
State Requirements: Texas requires a person in charge of a food establishment to have a Certified Food Protection Manager (CFPM) on premises at all times and demonstrate knowledge of food safety as outlined in FDA Food Code. Taking an approved Certified Food Protection Manager (CFPM) Training Course and passing an Exam is how to get certified. Local requirements may mandate Food Handler Training and exceed the state's minimum requirements.

As per the Texas Food Establisment Rules §229.163, the person in charge shall demonstrate food safety knowledge by being a certified food protection managaer who has shown profiency of required information through passing a test that is part of an accreditated program.
